Vin d'Orange

This is the perfect summer beverage to compile on a rainy and cold January day. It needs time to marinate to be ready for a refreshing drink on a hot summer day. Seville oranges are only available for a short time in winter, so now is the time to plan ahead. I was able to find all organic citrus. A large hinged glass jar is a great place to marinate your mixture before you decant and rebottle in several months. 

1 bottle (750ml) dry white wine (I used pinot grigio)

5/8 cup (120g) ultrafine granulated sugar (known as caster or baker's)

1 cup (250ml) vodka

2 Seville oranges

1 navel orange

1 lemon

1 bay leaf

Method

Pour the wine and sugar into a large container and whisk until the sugar is dissolved.Wash all the fruit and dice into bite-sized pieces *save a few round slices of orange to place in the jar for a nice look.Place all the chopped citrus into the 2 liter hinged glass jar and top with the wine & sugar mixture and vodka. Add the bay leaf too.Leave to macerate for at least 3 months in a cool & dark location. Every so often give the jar a good shake.After 3 months, decant into a glass hinged wine bottle (like Ikea sells). Pour the mixture into a fine sieve and using a funnel you can then pour the sieved liquid into the final glass vessel. Leave for 1 more month before drinking. Store in the refrigerator once openned.
