Pan-fried Lemon Garlic Chickpeas

Sometimes you just need a super quick side dish and this fits the bill. Great served alongside chicken, beef, and just about anything were Mediterranean flavors match. All you need is a can of drained chickpeas and this one is very easy to double too.

drizzle olive oil

1 can chickpeas, drained

1 teaspoon dried thyme

1 lemon, juiced

sea salt & pepper

Method:

  1. Preheat a large cast iron frying pan over medium-high heat.

  2. Heat the olive oil for 30 seconds before adding the drained chickpeas and dried thyme. Saute, stirring often to crispy up the chickpeas.

  3. Cook the chickpeas approximately 5 minutes. Before serving toss with lemon juice, salt & pepper. Enjoy.
