Pan-fried Lemon Garlic Chickpeas
Sometimes you just need a super quick side dish and this fits the bill. Great served alongside chicken, beef, and just about anything were Mediterranean flavors match. All you need is a can of drained chickpeas and this one is very easy to double too.
drizzle olive oil
1 can chickpeas, drained
1 teaspoon dried thyme
1 lemon, juiced
sea salt & pepper
Method:
Preheat a large cast iron frying pan over medium-high heat.
Heat the olive oil for 30 seconds before adding the drained chickpeas and dried thyme. Saute, stirring often to crispy up the chickpeas.
Cook the chickpeas approximately 5 minutes. Before serving toss with lemon juice, salt & pepper. Enjoy.
