Almost Mary’s Gone Crackers

I love Mary’s Gone Crackers and used to buy them weekly when I lived in the U.S. I’ve never seen them in the U.K. so I had to get creative and make my own.

Wet ingredients:

2 cups cooked brown rice

3 Tablespoons extra virgin olive oil

3 Tablespoons psyllium husk

2 Tablespoons water

1 teaspoon Maldon sea salt

Dry ingredients:

2 cups sesame seeds

2 cups flax seeds

1 cup rolled oats (or buckwheat flakes)

1/3 cup chia seeds

1 teaspoon Maldon sea salt

Method:

  1. Preheat oven to 320F/160C using convection fan. If you don’t have convection fan, use 350F/180C.

  2. In a food processor, blend all the wet ingredients: cooked brown rice - salt. Place the blended mixture into a large mixing bowl.

  3. Pour all the dry ingredients into the wet rice mixture. Using a wooden spoon mix all until fully incorporated.

  4. Line a baking tray with a silpat or parchment paper and divide the mixture in halve. Spread the first halve on to the tray and either press with wet hands or place another sheet of parchment on top and roll out to 1/8” thick.

  5. Bake in the middle of the oven approximately 20 minutes. Remove from oven to flip and bake approximately 5 more minutes or until fully browned and the center is no longer damp - must be fully dried out.

  6. Leave on the tray to cool completely. Repeat with the remaining dough or refrigerate the dough for one day to make fresh crackers. Store in an airtight container for 1 week. Save the crumbles to top salads.
