Deliciously Bitter Sweet Salad

We love this bitter and sweet Italian salad. The radicchio provides amazing color & crunch. The sweetness of the orange provides a perfect balance to the bitter and a bit of optional pecorino or semi-hard goat’s cheese is wonderful. Perfect paired with a slice of pizza or anything else really.

1/2 head radicchio

1/2 red bell pepper

1 orange or blood orange

sea salt

splash white wine or champagne vinegar

splash extra-virgin olive oil

1/4 cup Capridor semi-hard goat’s cheese, bite-sized pieces (or other)

Method:

  1. Using a serrated knife, slice the radicchio as thinly as possible and place into a salad bowl.

  2. Slice the red bell pepper into thin strips, approx. 1/16” and place into salad bowl.

  3. Supreme the orange. Slice off the top & bottom so these sides lay flat, *squeeze the juice from the top & bottom slices over the salad. Then run the knife along the sides, just under the pith to remove the skin. Then slice the supremed orange into rounds. Then slice the rounds into quarters. Place into the salad bowl.

  4. Sprinkle a bit of sea salt over the salt, a splash of vinegar & olive oil too.

  5. Slice the cheese into bite-sized pieces.

  6. Toss and serve right away.
