Italian Tuna Salad

I love a non-mayonnaise tuna salad and Italian ingredients pair so well here. This is great as a salad, wrap or sandwich - however you fancy and leftovers are good on day 2 as well. Tuna brined in water or in oil work equally well. Enjoy.

1 can tuna, drained

1/2 lemon zested

1/2 lemon juiced

2 green onions, diced

2 ribs celery, diced

1 Tablespoon capers, diced

1/4 red onion, diced (or pickled red onion)

1 red bell pepper, diced

5 jarred artichoke quarters (in oil), diced

pinch red chili flakes

splash red wine vinegar

*Optional, if needed splash olive oil

1 head lettuce, shredded (or wraps or bread)

Method:

  1. Prepare an area for all the chopping.

  2. In a large bowl add all the chopped ingredients. Stir to combine and serve with shredded lettuce, wraps or on crusty sandwich bread.
