Oven Roasted Greenbeans

I was gifted a delicious yuzu sea salt from Oaktown Spice Shop when my friend visited London last year. It is delicious on veggies and worth getting some. Otherwise, simply roasting with olive oil, sea salt and a bit of lemon juice will be just as good. This makes a great side dish and we love using chopsticks when we eat these.

1 lb. greenbeans, trimmed

1 Tablespoon Extra virgin olive oil

1 teaspoon Yuzu sea salt (or see above)

Method

  1. Preheat the oven to 425F/220C and line a baking tray with parchment paper.

  2. Trim then ends of the greenbeans.

  3. Place the greenbeans on top of the parchment paper and drizzle the olive oil. Toss with your fingers and spread out in a single layer. Sprinkle with salt.

  4. Roast on the top rack until they start to brown and take on a hint of color (or cook longer to your liking).

  5. Serve warm or room temperature. Enjoy
