The Perfect Sandwich

Sometimes you're too tired to cook or you simple just crave a sandwich. On one hand the ingredients are nothing too special, but it's rather the way certain things are chopped and assembled that make it extra tasty as the flavor profiles come out when sliced paper-thin vs. thick. We love this for a super quick meal.

Serves 2-4 (depending on hunger)

1 loaf ciabatta bread

1 avocado

1 Tablespoon extra virgin olive oil

1 Tablespoon red wine vinegar

1 avocado, smashed

1 tomato, cut into paper-thin slices

1 small red onion, cut into paper-thin slices

1/2 English cucumber, cut into thin slices

4 Tablespoons olive tapenade

handful of slivered radicchio leaves

handful of lettuce leaves

handful of finely chopped chives

Method

Cut bread in half lengthwise like a hot dog bun, not fully sliced through) and scoop out some of the 'bread' to create space for fillings.

On the top half of the bread drizzle extra virgin olive oil and red wine vinegar. Then spread olive tapenade on top.

On the bottom half of bread use a fork to smach slices of avocado into the bread.Next on the bottom half of the bread, layer the lettuce, radicchio, tomato, red onion and cucumber slices - sprinkling chopped chives between the layers.

Press both halves together and slice into 4 pieces and enjoy.
