Springtime Herb Fritters

*Use as many bunches of fresh herbs as you can get your hands on. These will still be good with less fresh herbs too, you just want the batter to be thick and not too runny, so reduce the number of eggs used. I’ve made this with just 1 egg and used handfuls of all the herbs and they came out great.

5 eggs (or 3 eggs and more flour)

1 bunch parsley

1 bunch green onions

1 bunch dill

1 bunch mint

handful of cilantro

1 clove of garlic

1 Tablespoon flour of choice

1 teaspoon Maldon sea salt

1 teaspoon dried thyme

1 teaspoon red chili flakes

3/4 teaspoon cumin

1/2 teaspoon pepper

1/2 cup crumbled feta

Optional: grated zucchini, grated carrot, or slivered fresh spinach leaves

Oil for pan-frying

Serve with lemon wedges & tzatziki if you like

  1. Method: Crack the eggs into a large mixing bowl and whisk. Set aside.

  2. Finely chop all the green herbs and add to the mixing bowl.

  3. Finely chop or mince the garlic cloves and add to the mixing bowl.

  4. Add the remaining ingredients (flour - feta) to mixing bowl and stir until combined. **If adding optional grated zucchini, carrot or spinach leaves, add to bowl and mix in.

  5. Heat a non-stick frying pan (or cast iron) on medium heat.

  6. Coat the frying pan with 1 Tablespoon of oil and allow the oil to heat for 30 seconds before adding 1/4 cup ladlefuls of batter to the pan. Flip after the bottom side is browned, approximately 2 minutes. After it's been flipped it will cook faster as the pan is now heated. Once browned on both sides, remove from pan and place on a plate lined with paper towels.

  7. Before adding more batter, carefully wipe the frying pan clean with paper towels by using tongs to remove old oil and browned bits that broke off.

  8. Repeat heating oil and spooning more ladlefuls onto the frying pan. Subsequent batches will cook faster as the frying pan is now fully heated. Don't walk away from the stovetop whilst cooking.

  9. Serve with fresh lemon wedges and if you like, tzatziki sauce.

    Tzatziki

    3" cucumber

    1 cup yogurt

    1 very small clove garlic

    1 Tablespoon each (chives, dill, mint, & cilantro)

    Salt & Pepper to taste

    Method:

    Using the large holes on a grater, carefully grate the cucumber. Place the cucumber in a small bowl and add 1 clove of minced garlic and the remaining ingredients. Taste to adjust seasoning.
