Apple Fennel Salad

Serves: 4

1 bulb fennel

2 red apples

2 teaspoons whole grain mustard

2 Tablespoons apple cider vinegar

2 Tablespoons Extra Virgin olive oil

Optional: handful toasted walnuts, goat cheese or blue cheese crumbles

Method:

1) Slice the fennel bulb into paper-thin slices using a knife or mandoline, and place into a salad bowl.

2) Slice the apples into matchsticks and place in the bowl.

3) In a small bowl mix together the whole grain mustard, apple cider vinegar and oil. Pour over the salad and toss.

4) Serve with optional toasted walnuts and goat cheese crumbles. Enjoy;)
