Lemon Artichoke Sandwich Spread or Dip
(In Italian: Paté di Carciofi)
In Italian, artichokes are called Carciofi (car-cho-fi). They are a delicious part of Roman & Roman-Jewish cuisine, not to be missed. This lemony spread is a take on these classic and bright Italian flavors. This pairs perfectly with grissini or crusty ciabatta or makes a wonderful sandwich spread.
Plant-based: omit Parmigiano-Reggiano and replace with miso or nutritional yeast
1 jar (10 ounces or 280g) artichoke hearts, in oil
1 Tablespoon Extra virgin olive oil
3 Tablespoons (15g) Parmigiano-Reggiano, finely grated
1/2 lemon, juiced
1 small garlic clove
1/2 -1 teaspoon sea salt
Optional: pinch ground cayenne & finely grated Parmigiano-Reggiano to top
Method:
1. Drain the artichokes from the oil and place in a food processor.
2. Add the remaining ingredients and blend until smooth. Taste to adjust seasoning (more lemon or sea salt) as every brand of jarred artichokes tastes a bit different.
3. Serve with grissini (breadsticks) or ciabatta bread. Keeps for 1 week in the refrigerator.
