Broccoli Fritter Pie (V)
This recipe came about when I wanted to make broccoli fritters, but I couldn’t be bothered to stand over the stove frying patties for way too long. So instead, I created this recipe which was both delicious and easy. A food processor makes this come together even faster.
1 1/2 cups chickpea flour
2 cups water
1 teaspoon Maldon sea salt

1 head broccoli
1 onion
1 teaspoon Maldon sea salt
1 fresh red chili pepper (or some dried chili flakes)
handful chives & cilantro
Optional topping: shredded parmesan cheese (vegan or not)
Lemon wedges for serving
Method:
Whisk the chickpea flour with water and salt. Set aside & remove any foam that rises to the surface.
Preheat oven 400F/200C.
In a food processor mince the broccoli, including stems until fine.
Steam the broccoli 5 minutes and remove from heat.
Finely dice the onion, red chili pepper, chives & cilantro - use the food processor if you can to make it quick work.
In a large mixing bowl, combine all the ingredients and stir until combined.
Pour all into a either a 10” or 11” cast iron skillet or an oven safe non-stick skillet. Top with optional parmesan cheese.
Bake until golden brown on top, approximately 30 minutes.
Serve slices with lemon wedges. Enjoy.
