Celeriac Apple Slaw

In my opinion, winter salads can get a bit boring. However, I’d much rather dive into this than some out-of-season greenhouse tomatoes that are tasteless. A food processor makes this come together in a few minutes.

1 celeriac, trimmed or peeled of skin

2 red apples, sliced & core removed

1/2 cup blue cheese crumbles

1/4 cup Greek yogurt

Method

  1. Using your food processor, shred the celeriac and apples on the large holed blade.

  2. Place the shredded fruit and veg into a large salad bowl.

  3. Mix in the cheese and yogurt, stirring to combine.

  4. Serve immediately. Leftovers last 1 day in the refrigerator.
