Warm Green Bean and Tomato Salad
Ingredients
1 lb. 500g green beans
2 large ripe tomatoes, cubed (or 1 ½ cups halved cherry tomatoes)
For the salad dressing:
2 Tablespoons red wine vinegar
½ lemon juiced
1 garlic clove
½ teaspoon oregano
½ teaspoon salt
¼ teaspoon pepper
scant 1/2 cup (100ml) olive oil or sunflower oil
Method
1. Trim green beans and cut into one-inch lengths. Steam them or blanch them in boiling water for 3 to 4 minutes, until almost tender. Drain beans.
2. Slice the tomatoes.
3. Blend all the salad dressing ingredients in the food processor until blended.
4. Arrange warm beans and tomatoes on a serving platter and drizzle salad dressing over. Serve warm or chilled.
