Rosemary Parsnip Fries

I’m not a huge fan of parsnips, but the seem to come in our weekly veg box - a lot. If you’re looking for an alternative to oven fries, these are a delicious substitute and you won’t miss the potato.

3-4 parsnips

1 Tablespoon olive oil

sea salt

fresh or dried rosemary

Method

  1. Preheat oven 400F/200C and line a baking tray with parchment paper.

  2. Peel and slice the parsnips into batons (or sticks), 1/4” width.

  3. Place the sliced parsnips onto the parchment and drizzle with olive oil. Toss with fingers to coat.

  4. Arrange the slices in a single layer and top with sea salt & rosemary.

  5. Roast until golden, approximately 20-30 minutes.
