Sesame Bok Choy
This side dish saute is excellent on it’s own or paired with hot noodles and shredded chicken of beef for a main dish. As we inch towards Christmas and more cold days sometimes you just need quick throw together meals so you can spend your time curled up by the fire with a good book. Regular sesame seeds will work if you cannot locate unhulled sesame seeds.
3 bunches bok choy
2 teaspoons olive oil
1 Tablespooon unhulled sesame seeds
chili flakes
Optional: soy sauce for serving
Method:
Wash and slice the bok choy into thin ribbons. Set aside the leaves to cook at the very end.
Preheat a cast iron or non-stick skillet over medium-high heat.
Drizzle in the olive oil and allow to heat for 30 seconds.
Sprinkle the sesame seeds into the oil and the thicker ribbon slivers of bok choy.
Saute, stirring often until tender and cooked through. At the very end stir in the reserved leaves to allow them to wilt. Sprinkle with chili flakes and additional sesame seeds if desired and serve alongside soy sauce.
