Spicy Bean Dip

This dip can be served room temperature with shredded cheese on top or warmed briefly in the oven.

1 can black beans, drained (or other bean of choice)
4 teaspoons tomato paste
3 Tablespoons water
1 garlic clove
½ lime, juiced
¾ teaspoon ground cumin
½ teaspoon salt
Dash ground cayenne pepper
2 green onions, finely diced
1 red pepper pepper, cut into strips
*optional shredded cheddar or jack cheese on top

1. Process all ingredients (except the spring onions) in the food processor until smooth.
2. Stir in the spring onions. Add optional cheese if you like and serve with sweet pepper strips and tortilla chips.

3. *If warming in the oven, heat at 350F/180C for 10 minutes or until cheese is melted.
