Springtime Pea Soup


Just in time for St. Patrick’s day. What’s your favorite food to celebrate St. Patty’s with? We loved this with some crusty sourdough bread.


Serves: 2 bowls (or 4 cups)
1 onion
1 bay leaf
4 cups water
1 t. Malden sea salt
Pinch thyme
1 bag (1 lb./500g) frozen peas
1 bunch green onions, chopped
Handful cilantro

Method:
1. Place the dice onion, bay leaf and water into a large saucepan, cover and simmer 8-10 min.
2. Add the salt, thyme and frozen peas - simmer 5 minutes.
3. Remove from heat and stir in the green onions and cilantro. Remove the bay leaf! Blend with your immersion blender (or Vitamix) & serve right away! A dollop or yogurt or drizzle of cream is nice, but not necessary.
