Strawberry Coconut Popsicles

I just love the taste of fresh strawberries in summer and what better way to eat the perfect ones and use the slightly mushy ones for popsicles to enjoy on another day? Concerned about sugar? Omit the coconut sugar and replace with a few drops of liquid stevia. This would also a be fun flavor (once frozen) to dip into melted white chocolate and more shredded coconut.

Makes: 6

1/2 can (7oz.) full fat coconut milk

1/3 cup water

1 teaspoon vanilla

1 tablespoon coconut sugar (or runny honey)

1 very ripe banana (black is just fine)

7-10 strawberries (depending on size)

1 Tablespoon shredded coconut flakes

Optional: extra coconut flakes to sprinkle into mold

Method:

  1. Measure and blend ingredients: coconut milk - strawberries. Taste to adjust sweetness level or to add water 1 Tablespoon at a time if you feel the coconut milk is too fatty.

  2. Stir in shredded coconut, fill molds and enjoy in 3-4 hours once completely frozen. Enjoy
