The perfect greens for your favorite pasta, side dish or to serve alongside eggs for breakfast.

This recipe is an adaptation on on one my mother-in-law makes. This recipe couldn’t be simpler to whip up and is great with eggs, as a side or tossed with pasta. Enjoy.

1 bag baby spinach

1/2 can diced tomatoes

1/2 onion

1 teaspoon Extra virgin olive oil

salt to taste

Method:

  1. Wash baby spinach and set aside.

  2. Open can of tomatoes. Set aside.

  3. Dice 1/2 an onion.

  4. In a frying pan over medium-high heat, heat the olive oil.

  5. Add the spinach, tomatoes and onion to the pan to wilt and saute about 5 minutes.

  6. Season with salt and enjoy.
