Chickpea Flour 'Eggs'

I've made my fair share of vegan and vegetarian foods over the last few years as my husband has gone fully plant-based. I too, eat plant-based much of the time, but I'm not opposed to a bit of high-quality fish, meat or cheese on occasion.

One of our favorite plant-based breakfasts has become Italian farinata baked with slivered onions and potatoes. One day I had a bit of extra batter from making farinata and decided to fry it up like a 'fried egg' to our surprise it worked really well and we've found to be a great egg substitute for some recipes (use flax or chia seeds for baking recipes as this won’t work) or to create an egg-free like omelette. This will also work very well for those with egg allergies or intolerances too. Chickpea flour is sometimes referred to as gram flour. This 'chickpea egg' works great as an egg replacer in: fried rice, omelettes, or pan-fried fritters.

If you're in need of 1 egg, simply mix together:

1/4 cup chickpea flour + 1/2 cup water

Whisk until smooth and use as required
