Tiny Gingerbread Houses!

I love the Christmas spirit in the U.K. and their penchant for gingerbread (all year I might add). I might be living in England, but the day after Thanksgiving has always been a traditional Christmas baking day in the U.S. for my family. I had a very long day at work, but I couldn't resist decorating these miniature gingerbread house tonight.

While I might not eat this type of recipe, since I prefer softer cookies. These were fun to make! I hand-cut the dough from a paper pattern and iced with royal icing. I think they turned out better than I could've imagined and they look adorable grouped together before they get packaged up for individual gifts in the coming weeks.

Tip: immediately after baking trim with a paring knife to square off any wonky edges that spread during baking.
