Gathering Spring Herbs

I made a visit to Turkey to spend time with my mother-in-law. We spent time doing our favorites: cooking and sewing! Or shall I say, I brought all my mending and she helped repair many things. We also went to visit a farmer and gathered spring herbs and made the most delicious feta and herb fritters. They were filled with: green onions, parsley, cilantro, mint and dill. So yum. Soon I’ll have to write up the recipe, called Occe, in Turkish, but so many similar recipes in all countries.

Update: you can find my version here: Springtime Herb Fritters. They are really adaptable and can me altered to include: chopped spinach leaves, shredded zucchini or shredded carrot - all delicious in different ways.
