Blueberry Orange Granola Bars

Wet ingredients:

4 Tablespoons coconut oil, melted and cooled

3 ripe bananas, mashed

1/2 cup unfiltered raw honey

1 Tablespoon vanilla paste or extract 

Dry ingredients:

4 cups rolled oats

2 cups wheat bran

3/4 cup dried blueberries (or fruit of choice)

1 cup almonds, coarsely chopped

*Optional: 1 cup non-dairy dark chocolate chips

2/3 cup sunflower seeds

1/2 cup flaked coconut

large pinch sea salt

zest 2 oranges

Method

Preheat oven 300f/150c.

Line a baking tray with sides (10"x14") with parchment paper.

Combine the wet and dry ingredients together. It's best to use your hands and really incorporate well (I use non-latex gloves).

Spread the mixture evenly over the parchment paper.

Bake for 30 minutes and pull out to score the mixture into granola bars, so you can easily finish cutting once they are finished baking.

Return to oven for 15 mintues.

After 15 minutes, reduce oven temperature to 200F/100C and allow to continue baking 15 more mintues to finish drying out.

Then turn off heat and allow to cool in the oven.Once cool, finish cutting the granola bars on the scored lines.

These will keep in an air-tight container for 1 week, or 2 weeks in the fridge or 1 month in the freezer. (*I keep some on the counter, some in the fridge and some in the freezer).

Eat as they are or crumble on top of yogurt for a quick snack on the go. Enjoy.
