Chickpea 'Tuna' Sandwiches

I love an Albacore Tuna sandwich every so often and these mashed 'chickpea' sandwiches make quite a good alternative. A food processor makes these quick and simple to make, however watch out for that serrated blade. If you don't have a food processor, you can easily use a fork to slightly mash the chickpeas. 

bread of choice

1 can chickpeas

1/2 lemon

1-3 Tablespoons olive oil

1 Tablespoon parsley

1 Tablespoon cilantro

1 small stick celery

1/4 red onion

2 green onions

Sea salt & Black Pepper to taste

Sandwich toppings like: dill pickle slices, tomato, cucumber, shredded red cabbage & lettuce, lemon juice

Method

Drain the chickpeas and pulse a few times in a food processor to get a slighlly mashed texture, but not as mushy as hummus. Carefully, set aside in a large bowl.

Add to the chickpeas: juice of 1/2 lemon, 1 Tablespoon olive oil, finely diced parsley, cilantro, celery, red onion and green onion.

Mix ingredients well. Taste to adjust seasoning and add more olive oil if it's too dry.

poon onto sandwich bread and top with toppings of choice.
