Strawberry Belgian Waffles (plant-based)
These classic plant-base waffles are crispy on the outside, soft on the inside and simply delicious served with fresh strawberries and a dusting of powdered sugar.
Makes: 8 belgian waffles
Ingredients
1 1/2 cups (180g) buckwheat flour
1 1/4 cups (130g) oat flour
4 teaspoons baking powder
1/2 teaspoons salt
6 Tablespoons coconut sugar
4 Tablespoons ground flax seed (or chia)
2 1/2 cups (600ml) oat milk
4 Tablespoons coconut oil
1 Tablespoon vanilla extract
Instructions
Preheat the waffle iron.
In a large mixing bowl add the flours, baking powder, salt, sugar and flax seed.
In a liquid measuring cup measuring the oat milk and add the coconut oil and vanilla extract on top.
Whisk the wet ingredients into the dry ingredients. Sift the flour into a bowl and add the baking powder, salt and sugar. Allow it it sit for 5-10 minutes to thicken from the flax seed.
Using a ladle, spoon the batter into the waffle mold and cook until golden.
Serve with fresh berries and powdered sugar. Enjoy.
