Tomato Soup
Serves: 2
*You may like to thin this soup with a bit less (or more) milk. Add half the amount, taste it and decide.

1/2 - 1 garlic clove
1/2 Tablespoon olive oil
1 cup (250ml) tomato sauce
pinch oregano
1 cup (250ml) milk or plant-milk (such as oat)
salt to taste (1/2- 1 teaspoon)

Method:
In a large saucepan, place the garlic clove and olive oil. Turn the heat on the lowest setting and gently saute the garlic clove until fragrant, but not browned or burnt. The moment you smell a delicious garlic smell, remove from heat for a moment.
From a low height pour in the tomato sauce (use a little water to rinse the can or jar clean & pour into the pot).
Return to heat on medium and add a pinch of oregano and cook for 2 minutes.
Carefully pour in the milk and desired amount of salt. Heat for 1 more minute.
Remove from heat.
Taste to adjust seasonings and serve immediately.
