Lemon Chicken Salad Sandwiches

These are a family favorite for picnics or any hot summer day. If it’s too hot to roast a chicken, buying a rotisserie chicken is the very best way to make this a super quick meal. Spread some whole grain mustard on your baguette and fill with lettuce, tomato and very thin slices of cucumber and red onion.

1 Tablespoon lemon juice

1 Tablespoon Extra virgin olive oil

1 Tablespoon mayonnaise (or plain yogurt)

1/2 lemon, zested

1 1/2 teaspoons red wine vinegar

salt & pepper to taste

chicken breasts, cooked and shredded

1 rib celery, diced

1-2 Tablespoons diced red onion

3 sprigs parsley, chopped

1/4 cup toasted sliced almonds

Optional additions: green onion, tarragon, dill & basil

Method:

  1. Combine lemon juice through salt and pepper in a large bowl.

  2. Add chicken through almonds. Taste and adjust seasoning if needed. Serve in a baguette or over sandwich greens. Enjoy.
