Pineapple Watermelon Popsicles
We recently ordered Lekue silicone popsicle molds, which are made in Spain and they’re amazing! Whether you feel like freezing a bit of your morning smoothie or making these - they are perfect and so easy to use. I love the fact that these molds lie flat in the freezer, which means less space is needed and no fear of toppling over not-quite frozen popsicles.
The pineapple is the secret in these. If you use a very ripe pineapple, you’ll swear these cannot possibly be sugar-free! Watermelon on it’s own, isn’t naturally sweet enough to offer much sweetness or flavor, but the pineapple sweetens the deal for the perfect combo. It’s a win-win.
Makes: 4
1 cup very ripe pineapple chunks
2 cups very ripe seedless watermelon chunks
1/2 lime, squeezed
Method:
Blend everything in a food processor until smooth. Don’t worry about the very small watermelon seeds.
Pour into popsicle molds and freeze approximately 3-4 hours until solid. Enjoy on a hot day of choice.
