Dungeness Crab Salad

This salad came about because we ordered some lovely dungeness crab, and came up with this fresh take on it. It took minutes to prepare and was a winner for a quick meal.

Vinaigrette:

Equal parts: fresh lemon juice & olive oil

1/2-1teaspoon sea salt to taste

optional: Tabasco or pinch ground cayenne

Salad:

1 head butter lettuce, shredded

1/2 red onion, thinly sliced

1 red bell pepper, thinly sliced into strips 1/8-inch

1/4 cup marinated & drained artichokes, thinly sliced

few sprigs parsley, chopped

2 cups cleaned and shredded dungeness crab

Method:

  1. Whish together the vinaigrette in a small bowl and set aside.

  2. Toss all the salad ingredients in a salad bowl or layer on a platter.

  3. Drizzle with vinaigrette and enjoy!
