Firecracker Beef Bowls

This recipe came about on a day I was focused on clearing out the fridge and came up with. My husband absolutely loved this and requested that I immediately write down the ingredients and amounts I used so it could be on repeat. I hope you enjoy it just as much as we did. Serve alongside hot brown rice.

1 leek

1 lb. (500g) ground beef

1 clove garlic

1 teaspoon salt

1 Thai chili

1/2 cup water

Sauce:

1 lime, juiced

3 Tablespoons soy sauce

1 Thai chili

1 green onion

Method:

  1. Thinly slice the leek and Thai chilies (set 1 aside for sauce).

  2. Pre-heat a non-stick or cast iron frying pan on medium-high heat. Place the sliced leek through water in the frying pan and saute until the beef is browned and fully cooked through.

  3. To make the sauce, thinly slice the green onion and chili and place in a small bowl alongside the lime juice and soy sauce. Pour 1/2 the sauce over the meat and stir well.

  4. Fill your bowls with hot brown rice and top with the firecracker beef and drizzle remaining sauce. Serve and enjoy.
