Sun-Dried Tomato Pesto Salad
This salad came together on a very hot summer day in London and we loved it. Hope you do too! Pecorino or Parmigiano-Reggiano works just as well.
1 head Romaine lettuce
1 red bell pepper
1 tomato
5 sun-dried tomatoes, packed in oil
1 garlic clove
1/2 teaspoon sea salt
handful fresh basil
1/4 cup olive oil
1/4 cup grated pecorino (+ more for top)
1/2 can white beans, drained
Method:
Wash and spin dry your salad leaves. Tear into bite-sized pieces.
Thinly dice the red bell pepper and tomato and place on top of lettuce.
In a food processor, combine the sun-dried tomatoes through pecorino and blend until combined. Stir in the cannellini beans and top the salad greens with them.
Top with a bit more grated pecorino and enjoy”)
